Lathem Family Farms, Inc., a shell egg producer and processor in Georgia, violated the Prevention of Salmonella Enteritidis regulation (21 CFR Part 118) during an April 2023 FDA inspection. FDA investigators detected Salmonella in environmental samples collected from the company's poultry houses and determined that eggs were produced, packed, and held under insanitary conditions in violation of federal food safety standards. The violations rendered the shell eggs adulterated and non-compliant with the Public Health Service Act and Federal Food, Drug, and Cosmetic Act, despite the company's corrective action responses submitted in May 2023.
